Quick and Easy Chirashi Sushi Recipe

Ingredients:

  1. 2 cups cooked Kokuho sushi rice
  2. 1 Japanese cucumber
  3. 2 avocados
  4. 2 nori sheets
  5. 8 pieces shrimp tempura
  6. 1/8 cup Tobiko(flying fish roe)

Seasoning:

  1. Kewpie mayonnaise
  2. Unagi sauce(optional)
  3. Black sesame seeds

Tezu:

  1. ½ cup water
  2. 2 tsp. Smiki rice vinegar

Instructions:

  1. Make sushi rice. Bake shrimp tempura according to instructions.
  2. Take 1 Japanese cucumber cut into 4 pieces and remove seeds. Take 2 avocados peel it and slice avocado width wise. Gently press slices with your finger.
  3. Wrap bamboo mat with plastic. Place half nori sheet shiny side down.
  4. Spread ½ cup sushi rice over the ½ nori sheet. Use Tezu (vinegar water) to avoid rice sticking.
  5. Turn it over and Put shrimp tempura, cucumber strips and tobiko at bottom end of nori sheet.
  6. From bottom end start rolling nori sheet with bamboo mat. Tightly squeeze the roll. Lift bamboo mat and roll over.
  7. Place the avocado on top of the roll using side of the knife. Place plastic wrap over the roll and then put bamboo mat over. Tightly squeeze the roll. Cut the roll into 8 pieces with knife.
  8. Tightly squeeze the sushi roll again with bamboo mat. Remove plastic wrap on top of sushi and transfer it to serving plate.
  9. Put tobiko on each piece of sushi. Add drizzle spicy mayo. Sprinkle black sesame seeds on top.
