Japanese Fried rice Recipe

Ingredients:
- 1 block of firm tofu
- 3 slices Ham
- 2 mushrooms
- 1 tomato
- ¼ cup potato/corn starch or flour
- ½ tsp. salt
- Freshly ground black pepper
- 2-3 Tbsp. ketchup
- 2-4 basil leaves
- 1 cup mozzarella cheese
- Parsley for garnish (optional)
Instructions:
- Slice tofu in half, wrap in paper towel and put heavy weight on tofu, Drain for 15 min.
- Cut ham into small pieces.
- Cut mushrooms and tomato thinly.
- Take 1/2 tsp. salt, ¼ cup corn starch, add ground black pepper and mix it well.
- Coat all sides of tofu with that mixture.
- Take a non-stick frying pan (must be oven safe) add oil and heat on medium high heat. Fry tofu on both sides until it becomes crispy.
- Spread ketchup, sliced tomato and basil leaves on top.
- Put mushrooms and ham on top.
- Spread 1 cup cheese then place the pan in the oven and broil for 5-7 minutes. Serve immediately.
